Here are the gross axle weights straight from the car's manual:
I apologise for the upside down image. It's the right way up on my phone but for some reason the web interface inserts it upside down.
Note that the gross rear axle weight is 1530kg and the 180kw.
I've weighed my car fully loaded and the total rear axle comes to 1478kg. We tow a 17' Poptop, which has an en suite.
We find our van very comfortabe and it can be easily and legally towed by the Touareg. You just need to make sure that you match the ban to the vehicle.

Sorry that you feel that way Buzz, but the axle figures that I posted are for a 2022 Touareg and they do seem to vary from those in your manual. Perhaps yours is an earlier model, but the 60kg difference is hardly a game changer, surely? GVM remains the same, and I iterate that there is no way known that these cars can tow much more than about 2500kg ATM as a PIG trailer. However, you seem to have done your research well, and the van you tow suits the car, but you still are within 50kg of your car's rear axle capacity. And this with a van that weighs way less than the claimed 3500kg towing capacity. Spare me! Cheers

I'm not saying that the Touareg can tow 3500kg van. I'm saying that it can be a tow vehicle when one considers the capabilities of the vehicle and match the van to those capabilities. Has the OP asked to tow that heavy a van? The OP asked about Touareg and Merc and I have provided inside information on the vehicle that I own. Nothing about the vehicle that I have no experience with.
Maybe the OP wants a luxury car that is very comfortable, not like some Japanese vehicles (and yes I have owned and driven many of those vehicles. Have you driven or owned a Touareg or Merc?). I offer my opinion on this topic because I do have experience with the subject...

we love our Touareg, its a 2004 V10, GVM when towing is 3160kg and GCM is 6580kg max rear axle load when towing is 1745kg
GVM, payload and axle loads increase when towing!
230kw and 750Nm it doesn't struggle towing the van.
btw it's got 279000km on the clock original engine and suspension.
