What is the best way to get important documents printed and or scanned when you are away from home ? For example, purchase contracts and similar documents that need to be signed and sent back?

I have used town libraries in the past.
Not sure if Local Post Offices might help but I would check them out.
Ask a "LOCAL" in a small town. They might print it for you.
Of Course Officeworks will do it if you are in a bigger Town.

We carry both a printer and a scanner. If its a PDF document you can sign it digitally.
Most country towns have a CRC (Community Resource Centre) where you can print, photocopy and scan paperwork etc and a Centrelink agency and sometimes a Visitors Centre.
We use them to photocopy our Yahtzee score sheets when we are on the road.........25 c per sheet from memory.

Gooday,
We have a Canon iP100 which is very compact, WiFi and available with a battery so you can use it without power. Not the cheapest but mighty portable and good results.

I carry a dirt cheap A4 printer/scanner, hardly every use it though, still I have the space and it's light.
If you use a public facility for printing just be aware the computer may retain a copy of your document, it probably won't but can and may. In general this won't matter but with some docs. it may - if you must print an important and sensitive doc. I'd try to use a library.

We carry a portable HP multifunction printer that has it's own battery like a laptop so if not on power we can still print. Reasonably compact and works a treat. It is wireless as well so we can print from our tablets.
We get most of our bills sent electronically these days so we can keep up with things while we are on our travels so like to print them out as well as receipts.

Mobile printing at its extreme!
HP recommended the HP Envy 5600. It's a standard, all-in-one (printer, scanner, copier, fax) device you can buy at retail for $129.99. But the printers heading up to the ISS early next year underwent significant modification.
We had this issue a few years ago when we sold an investment property and settlement happened when we were on the road.
Got paperwork faxed to the caravan park and they faxed it all back again. Free.

Possum, I went to the Harvey Norman website and called at an HN shop today to buy an HP Envy printer for $78.00. It looks cheap and will fit into a draw when traveling. I only intend to use it a few times a year when away in the van. The sales lady told me that this printer is OK if used regularly but if used intermittently the ink will dry up and I will have to buy new cartridges every use. Back to the drawing board!

Gooday,
Regrettably you will have that experience, (cartridges drying out), with any ink jet printer. You can get one from Brother I know with Ink Tanks, not Cartridges but they will not be $78-00, the other way is Laser they will not dry out but again are more expensive, though they are like all electronics will drop in price, or maybe a second had one from somebody you know may be another solution.

Gooday,
Just had a look on Google and here iOS a Brother Laser MONO for $83-00 odd. Website below, have a Brother Inkjet and it is fine.Hope this helps.
Blissonwheels. The trouble with this printer is the size and where to store it. I used to sell printer cartridges and was in the trade. Brother printers did not have a good name. I have been on the lookout for a printer for my van and today I bit the bullet and bought an HP OfficeJet 250 with a $100.00 cashback offer (still expensive as a 2nd printer). They are not cheap and as "blissonwheels" pointed out, they can dry out but, being a better quality printer, I think that it should be OK. The other advantages of this printer are that it is very compact and easily fits into a cupboard and it comes with wireless. As with others it will scan, copy and print. It was easy to set up. It also comes with a 30 money-back guarantee if you do not like it.
