I usually use three or four field mushrooms for this dish but any large mushrooms will do.

Stuffed Mushrooms
Sanyo Microwave Miracles cookbook

8 medium sized mushrooms approx. 6cm diameter
4 rasher bacon
2 shallots [or spring onions]
3 tablespoons fresh breadcrumbs
1/2 teaspoon dried parsley flakes
Pepper and salt
2 teaspoons butter
Grated cheese
Wipe mushrooms, remove stems
Finely trim and chop stems and reserve
Finely chop bacon and shallots. Place into a small bowl and microwave on high for 1 minute
Add breadcrumbs, seasoning and mushroom stems and mix well. Distribute the mixture amongst the mushroom. Sprinkle with grated cheese
Place mushrooms onto a plate and dot butter between mushrooms, cover with clingfilm
Microwave on high for 2.5 minutes

An aside; if shallots not available, use onion weed ; The flower stems themselves are characteristically three-cornered. The easiest way to confirm that you are looking at onion weed is to crush any part of the plant it will smell of onions. The good news is that every part of this plant is edible and it can be treated a bit like a spring onion or baby leek. en.wikipedia.org/wiki/Allium_triquetrum
