We are currently on a farm sit and it is very run down and overgrown, while we are only meant to feed dogs, chooks and check cattle, I feel that the owner needs some help but he considers all is OK. Should I do some tidy up to et the owner see what a change can do.

You could clean things up but there is a highly likely chance in 12 months time it will be back in the same condition.

I strongly suggest you first e-mail/SMS the owner and say something like:
"Fred; I'm getting a bit bored just sitting around is it OK if I do X"
And phrase 'X' so it's as wide as possible eg. "clear some weeds" or "organise the back yard".
Remember one man's junk is another man's treasure and, after all, it is *his* home and his right to (dis)organise it as he wishes.

Just leave the property as it is, it will only cause conflict. Better off not sitting there again.
Just look after what was requested & do that job thoroughly. Look for ticks on dogs etc & keep the chicken area healthy.

I am talking as a country bloke as a caretaker for a few jobs in our past, that had supposedly only 15 hours of work for us, little did we know; working for country people. I am not say this potential employer is like that but you would be surprised who are.

Definitly leave it as it is . Just do what you agreed to do for the farmsit and leave it at that. Exceptions are like emergency stuff and equipment failures that you needed to do farmsit properly.
