Can you premix breads/buns/dampers and the likes.freeze them, then at a later date pull one out, defrost and cook.

It can be done - Coles, Woolies etc have their breads mixed in Ireland then frozen and shipped air freight to their stores with "Bakeries" to be made fresh on site.
You would need a pretty big freezer to start freezing multiple loaves of bread, otherwise if making one at a time what's the point of freezing it?
