Thinking about putting in hot water for use at the sink instead of boiling the jug every time, any ideas which way to go?

We have a small Reva electric ho****er which sits in the cupboard under the sink. It is instantanious and is great for washing dishes , hands, etc. Only thing I would suggest is to not get too smaller flow rate otherwise to get enough heat in the water you have to run the water very slowly.

If you want gas and electric the Trauma 14L stainless steel is an excellent economical on gas hot water heater. The Trauma comes in gas only or gas and 240V electric.

Have a look at this one. It is 240v so one would have to be in a caravan park.
Have a look and decide yourself. We have the Suburban in our van which we have had for 10 years without a single problem.

I believe there's a unit out there which fits to the tap and gives "instant" hot water.

Maybe not quite what your thinking about but we have a Coleman water heater. Probably a bit big to sit inside the van, we use it in the annexe. Great for showers, but also hot enough for a coffee. Runs on small gas cylinders so not too much to store, or for greater use, can be hooked up to the regular bottle.

I have a Truma in my MH too .. It was part of the overall setup and at that time I knew nothing much about them at all .. It works on both Gas or 240v and has really been performing well on both counts .. so .. I couldn't be happier !
.. would suggest you look into them .. to see if they would suit your 'style' and your budget ..
