Here are some pics of some Salmon I caught from Tilba Beach this morning. The biggest was 3.5 kgs, and all were caught on fillets of yellowtail.I left them biting. Lovely spot.Will be back tmrow.Have enough fillets to feed a small army. See you soon, Bill.

Let us know what they tasted like. I caught a big Australian Salmon at Avoca Beach years ago and cooked it, took one mouthfull and threw it away. It was the worst tasting fish I had ever eaten. Cheers Pete

Deinitely a fish that needs to be bled when caught and consumed fast. Actually really nice in the smoker but a bugger to keep alight! Seriously, they are god smoked. I always remember my Mother would only use them for fishcakes. Didn't matter what Mum cooked, it was always nice.

If it's the same fish they use in canned Australian salmon, then I agree. Here puss, puss, puss. Dinner time! However, I do congratulate Bill on his catch. Fishing is not just about eating your catch, it's about the thrill of the sport as well as the relaxation. Onya Bill.

The fish need to be marinated in a mustard and vinegar sauce. Then they taste wonderful....
there is agreat recipe in the Weber book.....let me know if you want it ?

Here in WA, Australian salmon are known as "neighbour fish". They're fun to catch, but you give them to your neighbour.

Took another look at those fish, I wish I could have got on to them. Seriously, what line, sinker and bait? Paternoster rig? Two hooks or one? Did you use any artificials. I would have used two hook paternoster rig with stinky pilchards or rancid bluebait with plenty of scraps dropped at my feet. Would have bled them, taken them home and done them on the bbq with a nice ginger, soy, garlic and anything else!

Gave most of the fillets toThe local fishing club to make fish cakes for some function at Easter. I kept a couple of fillets for my self . As I did bleed the fish , they weren,t bad eating at tea , last night. Fish were taken on a sliding sinker rig with 2 ganged hooks and cut Yellowtail fillets for bait. Great fun!The biggest went like a jewfish until it jumped out of the water.Will have another try Sat Morn.Will post pics. Bill

don,t think so, Gerty. They were australian salmon. I think the ones youbought were Atlantic Salmon, probably farmed in Tassy.Got 2 more this morning about 45cm. Its was a bit slower this morning , but enought to make it fun. I released the fish as I have enough.Am going to camp at Shelly bay, on Wandonga inlet , tonight and put the inflatable in to try for a jewfish or some Taylor.Nice spot, but you need a 4wd to get in. They can be good if you bleed them straight away, then fillet, skin and debone them. Then once you have the fillets like this cut them lengthways along the central line and shave off the dark meat along the centre line. They good in a curry too. My dogs used to love them. Max, a shepherd husky cross would swallow a whole deboned fillet raw, but Georgie, a pure bred shepherd preferred hers very lightly cooked in the microwave. And yes I have smoked them as well. Very tasty with a cold beer.

****le Creek - the southernmost street in Australia - the guys caught some flathead and Aussie salmon - good feed. Some locals, divers and with a boat fed us on some abalone - delicioous after having the s...t bashed out of it, cooked quickly in garlic butter, and the next night some squid - 3 different heats of chilli cooked by Bob(Florinhill) - yummhy!!!!!!!

Gerty, It ain't the fish you buy in the supermarket and GaryKelly is right, cheap fish canned in the supermarket that Mum used to make Salmon Mornay out of. Used to be a big industry along the southern coast. The salmon you buy is a farmed fish from Tassie that swims up a freshwater river in the northern hemisphere, has a good time, lays its eggs and dies. The young swim out to sea and return to the same river to do the same.
03 troopy, the darker flesh has never bothered me on fresh fish, I have taken it off and frozen it and found that it actually is better frozen without it!
But it is still better bled and straight on the BBQ, open fire on the beach is best. Like mullet from the sea on an open fire is fantastic. Love catching them on light gear. Best effort was a fish about 2.5kg on 6lb bream gear, had a ball. Thing danced accross the water like you wouldn't believed. Did a better job than my 86cm Barra.

Yep - saw the whale sculpture - beautiful - the weather was pretty good while we were there - rained one day, filled two buckets, which in turn topped up the water tank, and did the washing. Lovely place - would recommend anyone to go down - road is dirt, but in good condition at the moment anyway.
