G'day goldenyears,
you will get a much better response to your question if you copy it into the general section of the forum with a better heading like : "Planning a trip up the Stuart and seeking advice"
But just to start things off the stuart is a very good quality road to travel on and fuel is available about every 200-250km as are food and many roadhouses also offer powered campsites with amenities for a cost.
There are many many places to pull up for the night and a couple I would recommend are the Devils Marbles($3.30 pp self registration), Pussycat flats near pine creek($16 2 A pwd) great meals and bar opens at 4pm.
I am sure others will offer advice too.

Barrow Creek. $7.50 for a powered site. Great bar. The bullsh1t burger is a beauty at $12.50.
Pussycat Flats is now $20 or $22, but still good value.
Stuarts Well.
Adelaide River Racecourse. Bar opens at 4pm. Good meals too. Swimming pool.

We stayed at Pussycat Flats on the way north and again on the way south in the winter of 2014.
We must have been ripped off, as we were charged $24 2A a night for a powered site.
