If you have unlimited mains power available: set the fridge to +2C and the freezer to -18C.
If you are running from batteries: set the fridge to +2C and the freezer to -12C.
If the freezer is running at -12C all food should be used before it is three months old.

+2 is what the fridge needs to be set at as this is correct for all perishable goods.
As mike said -12 is okay but reduces life of goods in freezer, as -18 is correct for frozen goods.
Make sure your goods are frozen before you place them in the freezer compartment. This will reduce the time the compressor has to run reducing amp draw.
Also keep unit well ventilated.
As a tip:
Place a piece of insulated material (old sun visor) over the frozen section to reduce heat ingress when door is open. It does make a difference.

another tip - if you've set up in an area with hot sun light, try to have your van parked so the fridge catches the least amount of sun (particularly afternoon). Not always possible of course.
You can also get a light sun screen net which covers the fridge area and is set up at a sloping angle from the top side of the van and pegged down to the ground.
We have one that will go onto our annexe or the other side of the van depending on the sun. Its high quality material (dull purple colour which apparently reflects the sun best) which we bought from a dealer for $90. It has a series of bungy cords to go between it and the ground pegs so it doesn't rip in high winds
