We have 3x100a/h batteries which we intend to replace. Should I remove the 3 batteries all at once or remove and replace each individually?

Why do you want to replace? If they are bad how do you know? How old are they?
If you are sure they or one are bad replace all

These batteries are 8 years old and we are replacing them with 130a/h before our trip to Tassie for 6 months. Dont want the hassle of replacing same during the trip.

Replace the whole lot in the one exercise. You should get a well balanced set that way.

I replaced all three in one hit , make sure you know what cables go where , maybe tape them and write on them so you dont get it back to front.

I find taking a picture with my phone before disassembly works better than my memory of where the cables go .

Yep, replace the lot together.
8 years is a pretty good run for batteries.
Suggest you replace them well before your planned trip, you don't often get a dud, but it can happen.

I think Bas + Eve are going to replace all the batteries. The question was if he should take them all out at the same time, and then replace with 3 new ones, or remove and replace (all of them) one at a time. (well that's how I read the post?)
I have recently replaced mine, and did them all at once. That way you can check the structure holding the batteries, as the new ones will be heavier unless they are lithium.
