Not being a solar expert I'm looking for advice I want to add extra panels to our solar , I'm thinking of buying a 250w portable set up to supplement our reserves . Can I put an anderson plug onto the batteries to connect to the portable panels and still have the rooftop ones connected at the same time ? the portable ones have an inbuilt regulator.

Maybe, maybe not, depending on the panels and the voltage that the controllers deliver to the battery.
Better would be to buy a portable panel that has very similar voltage outputs to the existing panels and feed it through the existing controller, if it has sufficient capacity.

Another option is to either remove the solar controller from the portable panels and mount it close to the battery. Wire the battery side of the controller to the battery with a fuse and an Anderson plug to the solar connections on the controller. Fit another Anderson plug to the portable panel lead and you can connect/disconnect the portable solar without having to change anything else.
