Is this road steep/hilly or windy? What is general condition of road? Plenty of overtaking lanes? We towing 23ft van behind 2010 Toyota Cab. Or is there a better way to get to Canberra from Orange.............we aren't into large towns, prefer the country

Via Cowra, Young, Yass to Canberra would be the best way. The first section to Cowra is probably the hardest but from Cowra it real easy to Canberra.
No serious steep or windy sections. Just country roads.

Via Blayney, Cowra, Across to Boorowa, onto Hume Highway (left at intersection ), Bypass Yass, take Canberra offramp through Murrumbateman and into Canberra...

Why are you concerned whether the road is steep or windy? If your rig is not overloaded or poorly maintained it should be able to handle any of the roads drawn with solid red lines on the map. Drivers should also gain experience in towing over these roads before they inadvertently box themselves in on some side road and get into a panic.
To answer your question, The country around your route can be described as undulating. There are bends along the route that you should take notice of the speed advisory signs. However there is nothing along the route that should worry a competent driver.

Have been through the road from Bathurst through Abercrombie River and Crookwell into Gunning and onto the Hume just above Yass a couple of times recently.
Very nice scenic route with good sealed road. A bit steep through the Abercrombie River Valley, but we went through no issues at all towing 3 tonnes and 21' van so you shouldn't have an issue.
