Has anyone converted their Jayco dove or similar wind up from double bed to single beds?

I'm not certain of your reasoning for this.
With E-W facing beds I know it's difficult not to disturb one partner if the other need to go for a "2-3am walk" (& it was quite cold at those times in Canberra in the middle of winter). Unless you have others using the extra (double) bed, you could use that as well as the front queen.
We had an Eagle for 9 years & I made it a 'policy' that if my wife needed to go 'walkies', I would go too - rather than wait another hour or two when I needed to go.
I solved the problem with our current van - it came with single beds!

I understand your confusion sorry I meant the Penguine not the dove not the models with the two pull out beds. I do apologise.
