Anywhere in the Snowy mountains or the Victorian highlands is cool (mostly). Or try the South coast NSW ...Eden, Tathra.. or the coast in Vic. Tas is cool too, ask Ma!
Hope you didnt get caught in the storms yesterday or this arvo Chi Chi?
Yesterday was a bit tricky trying to keep mother dry whilst taking her on her daily outing. Got caught right in the middle of it. Today safely tucked up at home. Did you get the hailstorm as well. Last one we had my car was out the open and it got peppered.
The SE of SA is usually a cool region, as is Pt. Lincoln and Lower Eyre Peninsula, to Streaky Bay. Ceduna is one of the country's hottest towns in summer, but it can be the coldest in winter. Anywhere by the sea fronting prevailing winds will give you cool evening breezes most nights. I can handle hot days, but a cool night for a good night's sleep is essential to my sanity. All the best with your plans.

South coast NSW (south of Nowra) is usually very pleasant summer temps. (BUT we do have some hot days) This summer we have only used our air/con twice.

Not to many cool places in Qld, but usually the elevated places like Tamborine Mountain, Maleny. Toowoomba is a bit hit and miss. It can be very pleasant, but I've been there in September and it's been damned hot!
There's usually a nice sea breeze anywhere on the oceanfront.
Try the Atherton tableland in North QLD. I know it sounds strange but, I live in herberton (on the tableland) and my experience is that here it rarely gets over 30 degrees in the summer as this whole region is almost 1000 meters above sea level. We never get those hot northerlies as you do down south - we are the north. I only camp/travel in the winter and return here for the summer as I find it more comfortable here than anywhere. Today, (Feb) typically its around 25 degree max here. I've lived in several areas of OZ and the summers here are the best. It does rain a bit in summer but we dont get the severe storms either. Plenty of van parks, etc in the area which includes ravenshoe, atherton, malanda and more.

Stay cool

My father spent time on the Atherton Tableland during the war in the army and I can recall him describing it as "The Land of Milk and Honey". When I visited there I could see what he meant.
Glen Innes in NSW is usually pretty cool, spent xmas there the year before last in a track suit.
When the East Coast of NSW is under the influence of a South Easterly airstream the weather along the New England Tableland (Walcha to Qld Granite Belt) can be cool and drizzly even in summer.
A short drive west of Glen is Inverell where the weather can be nicer in these conditions. Even in quite warm to hot weather in Inverell the nights are usually mild and it's normal to need a blanket on the bed. (in a previous life I lived in Inverell for over 20 years)
The North Coast of NSW is another option. If not too far inland, regular sea breezes keep the temperature at a comfortable level. Good idea to avoid North Coast is school holidays however.

Inverell is known to get some cold frosty nights and mornings in winter (I lived through 20 of them) but many nice days. Summer max temps often rise up to the low-mid 30s but with pleasant evenings. Glen Innes/Armidale can be damn miserable in winter, Guyra worse.
