Chris, I dont like cities either but these days even I can get passed sydney with out any probs.
Heading in from the north you exit the highway1 ( pacific hwy) onto Pennant Hills Rd. (It is a straight ahead exit as the hwy exits left).
Follow this through Pennant hills for seven kls till it meets the M2. ( this is a cross road ) turn right & just keep following this & it becomes the M7 all the way to the Hume Hwy.
The only busy bit is through Pennant hills, Its a toll rd but worth every cent as it passes around the back of Parramatta, 80-100 klm all the way, couple of sets of lights .

I'm not sure if that is the best way to go if you need to get to Otford Chris. Log onto NRMA site and see where they take you. Going the M2 and M7 will take you right out to Liverpool and you need to get back to the coast just south of Sutherland. You may have to cut across somewhere off the M7. OK I have checked the map and you could go all the way down the M7 and when you get on Hume Highway watch for Appin Road and cut across from there or go off near Moorebank. This link should help you

As gst says, go online and get a vistor pass for etag - unless you have one for Qld. Hope this helps.
don't for get you'll need an e tag account to go on motor road ways
You won't need an e-tag for a "one-off" journey such as this. There is a 13 number prominently displayed at several places along the toll road. (I think it's 12 TOLL, or maybe 13 ROAM, not sure) There is no need to make a prior arrangement as you have up to 48 hours after the trip to make this call. This raises a temporary pass good for further trips for up to a month, there is a small charge for this over and above the toll.
In my view the few dollars in tolls is well worth it.
Re the rest of the trip from Townsville, the shortest/quickest/best way from NQ is via the Bruce to Rocky, Capricorn to Westwood, Liechhardt to Goondiwindi, Newell to Narrabri, Kamilaroi to Willow Tree, and New England to the F3, then follow Justcruin's directions (above)
Here is the Google Maps link...http://goo.gl/maps/C3BWA You can edit this to suit your requirements.
(edit to amend google map link to show whole route)

You can purchase what is called an Emu pass for travel on NSW toll roads. You can purchase it online and it is good for 30 days. You can do it ahead of time just need to give the start and finish dates. It saves having to worry about paying afterwards within the time limit. I think you will find there are different numbers for the M2 & M7. The link below will take you to the RTA site
Thanks everyone for all your helpful tips, I will certainly use them on my trip "down south". Would also love to catch up with some Nomads on the way. Hopefully I will meet some on my free camping stops.
just be careful Chris, or should I say don't be like me........I thought we had 48hrs to pay the toll after a trip to Sydney and return (south coast) the "48hrs" applies to each toll so consequently the 48hrs for the forward journey had well and truly passed by the time I got around to paying for the forward and return trips.....my fault entirely for not thinking, the fine was a definite learning experience, the Prado now has an Etag!
Chris, if you come via Mudgee & camping in the area, give us a yell. Only 30km from there at Gulgong. Not free but our showground isn't a bad spot & pretty cheap.

No cities , no tolls , no low bridges . From Penrith you take th 2nd exit going up th hill , turn right .
That is The Northern Rd , follow it to Elizabeth Drive , turn left , follow Eliz Drive into Liverpool.
It is not until you get to Liverpool , you get any traffic . You have school hols about that time as well .
Richo.
Thanks Richo, looks good I like the idea of no tolls and no low bridges to scalp meOMG it's a worry. Will print out the map from the link and take it with me. (thanks jimricho).

The two weeks were great thanks, went up to Cooktown then checked out Cape Trib and the Daintree (beautiful) back to Cairns for 1 night (stayed in a CP and felt like a sardine. Then a couple of nights in the CP at Fishery Falls. Lovely little park and quite reasonable. I had planned to do some free camping, but it didn't work out that way, it was just easier to pull up in a CP and the guys like their flushing toilets and hot showers. (no sense of adventure at all) The Winnie went like a dream. We only had a couple of problems. The first one being no back brakes due to the guys who did the springs not allowing for the extra height and the back brake sensor or whatever it is, not making contact. A great old mechanic in Tully fixed that for us on the way home. (better late than never I guess). The second prob was the low water sensor kept beeping. This was fairly easily resolved by a clean of the contacts on the sensor. Radiator was full and there were no overheating problems. Hill climbing was much better, only went down to 40 kph instead of 20 kph. Winnie won't be rushed, but she will get there in the end
Old Boar - Will do if I end up going that way.
Brickies, never a truer word was said, I am so grateful.
Many thanks everyone for all your helpful advice, it will certainly be put to good use next week.
