We have a Jayco Conquest 2018, we have had it for over 1 year and enjoy it very much, however I was surprised with how much road noise came into the cabin when driving on those course road surfaces and the concrete roads in NSW. After a bit of investigation I found that there is a cavity in the transition shroud (between Fiat and Van) which goes all the way up the cabin, so recently I got two small cushions, took the covers off and pushed them up into said cavity, wow what a difference, I reckon it has reduced the road noise by over 50%.
I am not familiar with motor homes Steel Dog but it appears strange to me that there is a cavity in construction as you have indicated.
Maybe there is a panel missing which may provide some insulation.
If you havent already asked the manufacturer about this I would do so, or at the least, find another owner with the same vehicle and check if there is a panel missing.
