Where to go in 3 weeks from Sydney during Aug/Sept

Can anyone suggest an itinerary or a list a few 'must sees' for a couple who are based in Sydney and would like to take a 3 week caravan holiday in Aug/Sept?  They are thinking of travelling north or northwest and are happy to take a few gravel roads, but do not have an offroad setup so they can't take any 4WD tracks.  Any advice would be most appreciated.

Have a look to Boomi if you love a hot pool. $6 a night all inclusive and fantastic. Heaps of good locations over the great divide. Burren Junction free hot pool and free camping, Pillaga forests, Coolah, Binnaway, Mendorin, Dunedoo, Gilgandra region. Is some great country around that region. No need to pay for a caravan park. What is a caravan park? LOL
