Hope everyone has a good Easter, myself I'll be just hanging around, we have people coming to see our House Easter saturday..... For those who want a BBQ on Good Friday but wish to keep it halal or Kosher or Christian try these fish sausages ( yes FISH SAUSAGES!!!!!) they are very nice indeed!
Fish Sausages
Origin: Scottish Period: Traditional
Ingredients
180g cooked white fish 60g peeled prawns 60g mushrooms 60g breadcrumbs 2 eggs, lightly beaten 120g fine oatmeal 2 tsp dried parsley salt and black pepper to taste cooking oil flour and butter
Method:
Remove and skin and bones from the fish and flake. Chop the prawns very finely then chop the mushrooms finely and fry in a little butter.
Add the fish, prawns, cooked mushrooms, breadcrumbs and parsley to a large bowl and mash together with the back of a fork. Season with salt and pepper then add half the beaten eggs to bind the mixture together.
Using floured hands form the fish mixture into sausage shapes then dip in the remaining beaten eggs and roll in the oatmeal. Shallow fry in hot oil for about 6 minutes, turning regularly to ensure that the sausages become an even golden brown. Drain on kitchen paper and serve.

Unfortunately I am stuck at St Arnaud helping my daughter move house and constructing a Dog Run for her two rotties. At times being a parent can be a pain in the butt It doesn't matter how old one gets the kids always need your help.

Ditto re good wishes for Easter and safe travel for those crazy enough to take to the roads. I am housesitting for a week and enjoying the space, the bathroom and the oven! Wlking each mornng through the bush with friends and have my daughter nearby so can see my grandchild daily. That said ,I can't wait to hit the road in about 10 days time, to head north taking my time before catching up with friends in the Warrumbungles. Can anyone tell me what the road is like from Walcha to Port Macquarie? Have heard it is a bit hairy. Haven't decided which way I'll go yet, depends on the day. Cheers, Helen

Forgot to mention, if anyone was going to the Easter Show, caravan & r.v show, or just wanted to look around Sydney (are you mad?) we have space for a small c/van or motorhome, for a couple of days. Anne and i are pretty quiet and like our own space, so would stay out of your way.

WoooW!! what a weekend.....perfect weather...perfect place.....met lots new friends .....the pajero ran great.......with the camper on the back....it didnt notice it....even had to put the cruise control on..so it stayed on the speed limit......"kept on creeping up"
