What exactly do you want to update on both the iPad and the laptop? Do you want to coordinate email clients or both be able to edit a document (say a travel diary) on one of the machines?
If you can give us an idea on that we may be able to offer suggestions on meeting the need.

We seem to have edited at about the same time there!
OK - using iTunes, the only things you can synchronise across the two platforms are those things managed by iTunes itself. Music, podcasts, pictures, movies, e-books and other things like that can be synced using iCloud, but a Word document doesn't fit into that picture.
Are you OK with using iCloud or do you need some advice there?
Like most things from Apple, iCloud is a simple thing to use, just flag that you want to backup/sync with iCloud and Apple takes the pain away.
The limitation is that everything has to be run through iTunes so only those things "approved" by Apple can be stored, but that is a big enough list for most people.
There are other cloud services out there if you need to backup and/or synchronise other file types though, but most of them charge and are not as easy to use.
