I have a juicer and often make a juice up of celery, apple and carrot. Its yummy, but don't like the waste of leftovers from it. You wonder how much goodness must go out in the bin.
I have actually tried that soup idea, and it was awful... all the flavour is in the juice. Its really yummy, the beetroot has a sort of earthy taste and stains everything a pretty pink! Easy enough to wash up though. It couldnt be bad for you but I wouldnt claim "miracles".
I think it would be more useful as compost. Marj has a handle on it. I bought a bottle of beetroot and apple juice to try. It's an acquired taste and I did get used to it. There's warning on the bottle about the colour of any water which leaves the body. They were right. It went pink. Quite weird really. If we did everything everyone claimed to cure everything that ailed us we'd pee pink one day and green the next from that wheat grass. Now that's something gross. Going back to nature is a good thing. Everything we buy is over-processed, but have you tried reading all those labels when you go shopping? It's worse than going to the library. Not everything is organic or bionic or whatever, but if we choose wisely we should stay relatively healthy. Or, it's back to the farm and grow our own.

And if we stopped eating everything they warn us against CG, we would have nothing left to eat. Stick to the basics is my motto and stay away from processed food.
It was a much harder physical life but it was so much more simple and we were all a lot healthier even if we did drink milk straight from the cow and use salted butter, not this plastic stuff they call margarine, and have proper rolled oats for breakfast, not the flavour sachet type ones that are around now.
I'd go back to those days anytime if I had the choice.
I have several food allergies and find myself cooking most meals from the beginning to avoid the flavours and preservatives in so many things nowadays. We are so used to home-cooked food, couldnt face a meat pie or shop-bought cake anymore. Ma, its easy to make old-fashioned porridge, and much cheaper too. If you soak it overnight, it cooks just as quick in the morning as the instant type. Add some raisins for flavour. Mind you I often think how much easier it would be just to use a packet of something when we are travelling.
I only ever buy the real rolled oats and make my own porridge. You don't have to soak it over night, couple minutes in the microwave and its done. Actually I do two minutes, give it a stir, then two more minutes.
For juice, raw is the go. I like beetroot as a hot veg, but it takes nearly an hour to cook, so I boil up a whole bunch (with skin on) at a time. Keep them in the fridge and peel and heat in m/wave ready for dinner. Yum!
I love raw beetroot juice based drinks. I've tried the bottled stuff but not the same so whenever I'm near a fresh juice place will always but a large one - apple carrot celery and beetroot is my favourite. Raw grated beetroot on salads is wonderful as is baked beetroot. Another brilliantly healthy veg is Jerusalem artichoke and that is lovely baked also. Another good body revitaliser is black grapejuice however with all the genetic engineering these days I think grapes have lost a lot of their nutritional properties.
I often wonder about vegetable juice, not because I doubt its value. But I wonder why not just eat the vegetables instead of throwing out all that food? You still get the juice, but you also get the rest of it as well.
My father was a farming camel and grew all that stuff. I love chomping on a carrot.

You'd be pretty hard pressed to eat a couple of beetroot, a bunch of celery and 3 or 4 apples in one sitting though. With the juice, you get most of the value from that much in one glass.
