Tomorrow I am making minestrone soup and chicken and vegetable soup

What is your favourite soup????

I make a mean chicken noodle vegetable soup. Skite on FB about having 20 containers of soup in the freezer. Next thing the offspring are raiding my freezer taking up to 6 containers of soup . Ah well at least they visit. lol

Chicken and corn soup. Beef or lamb and vege. Pea and ham. All get frozen into single serves so hubby and I can choose what we want.

I love soup, but haven't made any since we have been on the road as 1. we don't have a pot big enough in the van 2. we don't have a fridge big enough to hold a big bowl full and 3. we certainly don't have a freezer big enough to freeze any. When we were in a house I used to make fantastic pumpkin soup, pea and ham soup, chinese hot and sour soup, moroccan spiced vege soup ........

Pumpkin soup is great to make on the road. My recipe is usually gone in 1 or 2 sittings so no need to store.

Lamb shank and vegetable, made in the pressure cooker is the old family favourite.  Made up 2 batches yesterday ( because the lamb shanks came in pairs. Provided tea last night.  Have cryovaced 4 meals for 2 into the freezer and the rest for lunch today.

Chicken and veg is just as easy except for removing the bones. smilesmilesmile

I really like soup in my meal because it adds appetite if there is soup in the table. I'm into cream of mushroom soup as well as crab and corn soup. I used to this at home because it is easy and very practical in terms of food.

If you do a lot of soups here is a really unusual recipe to ring the changes. I've done it several times and it is pretty good.

 

Spicy Peanut Soup

Ingredients

30ml veg oil      1 chopped onion        2 crushed garlic cloves

1 tsp chilli powder (or however much suits you)

2 red peppers, seeded and finely chopped

225g carrots, finely chopped

225g potatoes, finely chopped

3 celery sticks, sliced

900ml veg stock                     6tbs crunchy peanut butter

115g tin sweetcorn    s&p

Method

Heat the oil in a large, heavy based pan. Add onion and garlic and cook, stirring occasionally, for about 3 mins, until softened. Stir in the chilli powder and cook for 1 min more.

Add the chopped veg, stir well and cook for 4 mins more, stirring occasionally.

Add the stock, peanut butter and sweetcorn, stir well until thoroughly combined.

Season to taste with salt & pepper. Bring to the boil, lower the heat, cover and simmer for about 20 mins, or until the vegetables are tender. Adjust the seasoning if necessary.

Ladle the soup into serving bowls, garnish if you like with roughly chopped unsalted roasted peanuts.

The recipe in my book says serves 6, I haven't done it since we've been on the road but vaguely recall that it makes heaps, so 6 serves is a pretty conservative estimate.

That's it.. I'm going to get the mrs to make some of that instead of her infernal pumpkin soup, it sounds very tasty and just the sort of thing that gets my tasebuds going. Although the pumkin soup isn't too bad when used in a pie floater.

I went to get a smoked hock for the planned soup and when they wanted $16 for it, I headed for the oxtail instead!

Cold and rainy here today, might get it all out and start it off.

parsnips, swede, turnip, carrots, potato, onion, celery, lentils, barley, maybe pumkin, mushrooms

Love a nice thick soup!

My family call my soups "stewp" cos they are pretty thick. I can relate to your post about soup-making on the road Nicholstones, but when I had to cook up all the vegs to get through a state border I discovered it disappeared faster than expected. You can freeze a smaller quantity and then when serving add a can of baked beans or whatever.

Yes, I also found it good to cook all the vegies up into a soup. I had a couple of 1lt ice cream bowls with me - one went in the fridge and one in the freezer and they kept OK. It made enough for a couple of meals. Also made a soup out of left over sauce from beef curry. Just froze it, then reheated it with some cooked leftover vegies and some chopped up leftover chicken sausages. Hubby was happy with it. Good easy meal on the road.

 Hi Rocket, don't have a recipe as such.

I throw a kilo of carrots, zuccini,broccoli in a blender.

Bout half a dozen onions and a full bunch of celery chopped up too.

However much chicken I have in freezer, (usually a kilo)

4 litres chicken stock topped up with the same amount of water

Then when it has simmered for an hour or so  I crush up 4 pakets of maggi chicken noodles

along with their flavour sachets. Season to taste . Yummo

Pea & Ham soup is my favourite.
Cooked in a camp oven low and slow, with a hamhock and green split peas.
Thyme - has to have a sprig of fresh Thyme in it!
