Michelle, I feel sure that you will be able to tap into the collective wisdom and knowledge of your fair city of Inverell to find a gas type person you can trust to either do the work competently or at least sign it out as Daryl (DB) suggests.
By the way, Michael, (Muller1), The name of Michele's town, "Inverell", is Scottish in origin and was coined by early (white) settlers in the area. Their names were Macintyre and Campbell.
I think what muller1 is alluding to is that just because the tradie (I hesitate to use the term tradesman with quite a few I have seen) has a license, it doesn't guarantee that he is competent or even sufficiently knowledgeable in his trade to ensure that the installation is 100% safe and according to the standards and regs anyway.

It may not even be relevant Jim as we have been outbid on the van and even though I have put another bid in and we are the current highest bidder if it goes up again I won't be bidding, we will just keep looking. You are right though I know a very competent gas fitter in town here and if we need to (if we win the van) I will get him to fit it.

I totally agree with both you and Muller1 and it happens more often than not, even when you do your homework and think you are using the best, it turns out that they are not. . .everything has it's risks.

I have seen a few of worth in Victoria and mainly South Australia but honestly Jim we didn't want to travel so far to get a van. We would travel to your area and Sydney and also the Gold Coast and Brisbane but everywhere else is too far when Ray still works. We will just have to keep looking. E Bay does have some excellent vans but as I said a lot of the good ones are Vic and SA. I just didn't want my super to sit in the bank too long otherwise it dwindles down unknowingly
You are required , at least in Qld , to have a current gas safety certificate to be able to transfer the ownership of a camper van fitted with permanent gas bottle and gas equipment on board the vehicle. I do not have personal experience with caravans but would you not also require a gas safety certificate for a van. If not , why not?. Installing permanent gas bottle and gas equipment in a camper van require minimum distance of the gas bottles from the fridge itself and the petrol filler point and exhaust exit point. Plus permanent exhaust fan in roof as well as lowest point in vehicle in cause of a gas leak. No current gas certificate - no transfer of registered owner. Be cautious of second hand 3 way fridges as they cost more than they are worth if not working properly and need fixing.

Yes A current gas certificate gas certificate[I think no more than 1month old] IS REQUIRED for reg transfers & new regisrations with ALL vans motor homes etc IN Qld if fitted with a PERMANENT gas installation
Simply removing the gas bottle does not change THAT
The gas installation & appliances are still installed & have to comply to the Standards
