Vegetarian Cookbook ?

Could anyone recommend an easy vegetarian cookbook, suitable for camping?   We have a cooktop but no oven so it needs to be something simple

All vegetables double wrap in Alfoils covered in butter, place in coals, test for tenderness with skewer - Nothing else can be done to help. You can try dusting in herbs and spices (Nutmeg, Oregeno , chives, pepper) - still will never taste like real food.

There's a few recipe's on this site. I had to provide vegetarian meals for a friends child for a short while. I think a few could be cooked on a stove top.

I copy recipes I like from the net into word, saves using the Internet when you find some you like.

Or this one https://www.freshoffthegrid.com/vegetarian-camping-meals/

Hope this helps.

Thanks Jayco Gipsy - and apologies for slow reply.

Good suggestions here:  I am giving some of them a go.  Am not a very capable cook at the best off times but am trying to avoid buying takeaway stuff while on the road : sometimes too easy to do!

Thanks again- really appreciate your suggestoons.
