I would need a better, more detailed description to attempt a suggestion.
What circumstances does it happen, when you just start, ...... or after it is warmed up, ....... or when you are just going along steady, ......... or when you put your foot down for a hill ??
What engine does the car have ? gears or auto ?
What happens when it is 'bucking' and how long does it go on for before it stops ?
Is it engine, transmission? Or is it suspension related ? Does it bounce over bumps ? If it has a few Ks on it with std shocks ? I would look into Suspension Bushs, shocks . They deteriate after 100,000 ks . Engine ? I would look into fuel supply, filters, lift pump etc if it has one ? Is a ride leveller fitted ?
It seems to happen when the Revs. don't match with the speed. I can be going quite nicely on 2,000 revs. at 90/100 kph, then suddenly she gives a lurch, and drops to Third gear, where she'll stay. I don't like to keep the Revs. too high, so I stop and wait a while, before I get going again.
She does the same thing in a lower gear, as well. I've been wondering if it is something to do with the Transmission Oil level ? It happens not long after a service as well though, so I'm not sure. Forgot to mention she's Automatic.

Your engine mounts could be stuffed. This would allow the whole engine/transmission assembly to 'wind up' under load, and when it lets go, you would get a surge which you will feel in the car. I assume this is a front wheel drive vehicle, in which case they should have a bracket to stop the engine roll. Either the bracket or the engine mounts are sus.

That description sounds just like the transmission is going into 'limp' mode and selecting 3rd gear to keep going. That usually happens with a severe lurch. Does it put a service light on the dash when it happens ? You should get the codes read from the diagnostic port by a mechanic with a scanner. There should be some information on probable causes stored by the ECU.
Is it a diesel motor or a V6 petrol. What year model ?
That shock change to "limp" mode is well known in some brands and can be fixed. The codes will tell the problem area. Consult an automatic transmission specialist they can read the codes and would know about common problems and fixes. It may be a faulty valve or the transmission is getting too hot or something ! The transmission will be similar to the transmissions in other well known brands.

There may be an internal relay / servo not working In auto, if its elect Ecu controlled . . It could be missing a gear or ratio . I would take it back Auto specialist. You keep saying she ? That could be the problem ?! No just joking !

Sorry guys, it sounds more like what Jaahn described, so on Payday, I'll get that checked out. I know you guys give good and useful info., but I thought this problem might have been a bit out there this time.

Could be anything from TPS, vacuum leaks on inlet manifold , PCV not working properly, fuel tank vent etc etc Thats just the engine . I assume theres no check engine light ? All this effects how the auto / trans works . Possibly something simple ? Hard to diagnose over internet also . If pinion angle on diff is wrong with badly worn Bushs , mounts ? As said is another .
Thinking about it and reading other posts I've had two issues with totally different vehicles that might be described as "bucking". ED Futura had a worn single worn distributor contact resulting in a power loss (at all speeds) then a perceived surge and the occassional unwillingness to even start. Mazda Tribute had a cracked vacuum sealed that meant acceleration from idle would snuff the engine at low speeds and the occasional loss of power followed by power surge. Both were dangerous really. My experience wasn't enough to diagnose these and a mechanic found them quickly. Definitely time for a mechanic.
