No Fat Fruit Cake


1 kg mixed dried fruit
2 cups black coffee or fruit juice of your choice (e.g. apple)
2 cups Self Raising flour.

Soak fruit in coffee OR juice overnight.
Mix in flour
Bake at 180c for 1 1/2 to 2 hours.

Tried the recipe this morning.
Found the mix a little dry so added about 1/2 cup of water.  Our oven was too hot at 180 degrees (it started to burn the fruit on top) so turned it down to 160.
Nice cake though and the fruit is juicy after soaking up the coffee.  Hubby suggested putting in one cup of sherry and one cup of coffee next time  smile  smile

Hi Barb and Darryl, glad you tried the fruit cake. Try using a shallower cake pan next time and you should not have to cook it as long. Hopefully the fruit wont' burn on the top then. Play around with the recipe to see what tastes you like the best e.g. apple juice instead of coffee, or orange juice. The Sherry sounds good too. Let me know if it works out the next time. Good luck.

Made the cake again and took it to work for the staff Christmas party.
Everyone love how moist it was.
No 1 is the top view of te Christmas Tree cake

No 2 is the side view to show the depth of the cake

I don't like using mixed fruit for cooking, but I use dried fruit medley, which is chopped dried apricots, peaches, pears, prunes, and sultanas, maybe paw paw etc, the Angas Park brand.
Would this fruit mix be ok, soaked in something like sherry or whatever?
I don't do much recreational cooking these days. Mostly main meals for freezing.
But it's good to have a recipe or 2 up one's sleeve for special occasions.
