This is GREAT for BBQ's.
Curried Egg-fruit.
1kg. Eggfruit [cubed]. 1 chopped Capsicum. 4 Tomatoes [sliced]. 2 Lge. Onions [ sliced]. 2 cloves Garlic. 4 T'bspns Butter. 1 T'spn Tumeric. 1/2 T'spn Ginger.
Melt butter, and add Eggfruit with 1 t'spn Tumeric, 1/2 t'spn Ginger, 1/4 t'spn diced Red Pepper. Saute' 10 mins. Add Garlic, Onion, Pepper [Capsicum] & 1 cup Water.
Cook 'till almost evaporated. Add Tomatoes, cover, and cook very slowly for 15 minutes.
Never lasts very long.

Egg-fruit in Cheese Sauce.
Peel Egg-fruit, and cut in 1/2 inch cubes. Place in saucepan and just cover with milk. Cook till tender, then thicken with Cornflour. Add Grated Cheese.
Goes well with meat, as a change instead of gravy.
