Cabbage, Bacon, and Cocomilk..


I started making this when my children were young, something like 25 years ago... I heat a frypan, and brown onionsx2 and then add 1/2 a choped cabbage, and when the cabage starts to break down i add bacon salt and pepper and you can add curry, and then simmer with coconut milk really a beautiful filling meal.. You can play around with the ingredents...  BEWARE<    Dont play Duch Ovens....biggrinbiggrinbiggrinbiggrin

I do something similar,but have never tried it with coconut milk. Will give it a go next time I cook cabbage.

SILVERBEET....I shred finely,put in frypan with very small amount of water and heat whilst stirring,only need long enough to steam the greens and wilt it. Add a good chunk of butter and stir then sprinkle some plain flour over and continue stirring,bit like making a roue,when the flour and butter are incorporated add some milk just enough to make a white sauce. Add salt and pepper to taste. Takes about 4 minutes.

ZUCHINNI....Slice thinly lengthways. In a frypan again a good chunk of butter and a couple of cloves of crushed garlic (I just use the jar variety),heat the butter and garlic and add the zucchinni.Cook for a couple of minutes while stirring . I also melt the butter and garlic,add the zuchinni and chuck it on the barbie plate.

 This sounds really nice to , so i will try this when i can get SILVERBEET and ZUCHINNI. Thanks , have a nice day..
