Coconut cake

1 cup SR flour

1 cup coconut

3/4 cup sugar

3/4 cup milk

Very easy.  Just stir together and pour into cake or small log tin.

I cooked for first time in my cobb using a small silicone cake pan.  Delicious eaten hot with lashings of butter and nice cup of tea.

I would like to introduce you to Carolyn a Red Hatter from Sydney, her passion is photography and camp oven/Weber Baby Q cooking.

I have met Carolyn and cooked with her at a Camp Oven Gathering at Thora NSW.

That doesn't have any eggs - does it keep OK or is it so yummy it gets eaten too quickly?

It is best eaten on the day of baking and, yes, it is so yummy there is generally none left by the end of the day.  I don't make it as much as I would like because I am a solo traveller - need I say more!!
