A variation on Potato Bake.


On a recent trip to SA from Vic we had to use some vegetables up before going through the fruit fly check point at Yamba. 

This is the resulting recipe, just thrown together to use up what we had.

Cooked in a 20cm x 20cm x 70cm deep oven dish.

1. Slice potatoes & sweet potatoes into thin slices.

2. Slice brown or purple onions finely.

3. Grate tasty cheese.

Start with a layer of potato in the bottom, then a layer of onion followed by a layer of cheese & a layer of sweet potato.

Repeat layering until ingredients are used up or oven dish is almost full. Add a small amount of milk for moisture.

During layering add a little salt & pepper to taste.

Top layer is tasty cheese, a sprinkle of parmesan cheese on top of the tasty cheese adds a more gourmet touch.

Place in camp oven for 1-1.5 hours at around 180 degrees, use a skewer to test if bake is soft all the way through.

This bake goes well with almost anything, fish or meat.

It was surprisingly delicious & best of all it was OK to take through the fruit fly check point because it was cooked, not raw.

We had the other half of it the following night in SA & it tasted even better reheated.

ps. We also stewed up sliced apples, plums & pears with a little sugar & dished it up cold with icecream on two nights, OK to take into SA too.
