Recipe stolen from the Mathoura Bowling Club dining room.

Cook normal crumbed chicken or veal portion as usual.

While its cooking also cook bacon sliced up into smaller strips.

Squirt HP brown sauce or BBQ sauce over the top of the cooked crumbed meat & spread evenly.

Place crispy bacon on top then cover with mozzarella cheese & place under the grill until melted.

For a slightly tastier version add some parmesan cheese on top of the mozzarella before grilling.

Cook chips, open a bottle of red & enjoy. smile

Have you tried the Beerenburg BBQ sauce. It has a great taste in my opinion.

We generally use Tomato Supreme as a quick sauce for the top of our schnitzels but now you mention the BBQ sauce I will try it on the next snitty.
