I've often had that conversation with my Doctor and Dentist but, it's to do with the taste of medicines. Surely in this day and age a food chemist could at least add spearmint to the mix and make it palatable?

Tablets are not supposed to be palatable, this is to deter little kids eating them, the same as button batteries have a bad tasting substance put on them, the size of the tablet makes it difficult for kids to swallow them without chewing them, belt and braces approach.
I believe it all about the source of the "active ingredient."
For instance, if you were wanting Vitamin C there are many sources but, Kakadu Plum has more than Oranges.
The Kakadu plum (Terminalia ferdinandiana) is an Australian native superfood containing 100 times more vitamin C than oranges. It has the highest known concentration of vitamin C of any food, containing up to 2,907 mg per 100 grams (g). Just one plum (about 15 g) packs 436 mg of vitamin C, which is 484% of the DV
Differing Pharmaceutical Companies use differing sources for active ingredients. Usually due to Patent restrictions.
Note it is common for PBS medicines/pills (Generic) to be larger than original formula.

Didn't put my sister off from swallowing all the mothballs in every draw in our grandparents house when she was four.
Stomach pumped later a hospital.
